Pan Seared Brussels Sprouts

Directions:

  1. Cut sprouts into halves or quarters if they are larger
  2. Pour 2 Tbs. Olive Oil into skillet and warm on low heat
  3. Add cut sprouts and turn each flat side down
  4. Sprinkle Garlic Salt and Pepper
  5. Turn heat up to med/high and let sprouts begin to brown (about 5 - 6 min.)
  6. Turn each sprout over to rounded side and let brown again (another 5 - 6 min.)
  7. Can sprinkle more Garlic Salt and Pepper to taste

Guacamole de no Justicia by Steve Rice (No Justice)

Directions:

  1. Mash all avocados
  2. Chop all other ingredients
  3. Squeeze in lime juice and add all seasonings to taste
  4. Mix thoroughly and ENJOY!

Kicked Up Corn by Jerry Payne (No Justice)

Directions:

  1. Pre-heat oven to 350 degrees.
  2. Set out frozen corn.
  3. Cover the pepper with oil. You can put them on a grill or on a baking sheet in the oven.
  4. You want to char all sides of the peppers. Once cooked, place in a large bowl and cover with plastic wrap for 15 - 20 min.
  5. Start reducing half of the heavy whipping cream on the stove top. Low heat and bring to a simmer. Stirring occasionally. It will start to reduce and thicken.
  6. Take peppers out and peel the skins off. Place the peppers in a food processor with garlic, salt and pepper.

Festive Sweet Potato Casserole

Directions:

  1. Pre-heat oven to 375 degrees.
  2. Combine first 6 ingredients in a large mixing bowl mixing well.
  3. Lightly grease 8” x 8” square baking dish. Spoon into prepared baking dish.
  4. Combine topping ingredients in a medium mixing bowl, sprinkle over top of sweet
  5. potato mixture. Bake for 20 - 25 min. or until golden brown.
  6. Yields 6 servings

Crock Pot Black-Eyed Peas

Directions:

  1. If you are using dried black-eyed peas, soak them in water making sure the water covers the peas completely for at least 3 hours but preferably overnight.
  2. If you are using Melissa’s brand in the refrigerated section, skip soaking them.
  3. In a skillet, pan fry bacon and remove to plate.
  4. In remaining bacon grease, saute celery, onion and garlic.
  5. Pour black-eyed peas into crock pot or slow cooker, add sauteed vegetables, chopped jalapeno, crumbled bacon, beer, chicken broth and water.
