Yummy Broccoli Salad

Directions:

  1. Cut tips off broccoli 
  2. Cook bacon
  3. Chop onion
  4. Mix all ingredients in a large bowl and let sit in fridge for at least one hour. Leave longer for better taste.

* To feed a large group, get a bag of broccoli at Sam’s or Costco and use about 3/4 of the bag.  Cut the broccoli into bite size pieces.  Use one bag of cheese, one small bag of cranberries and one pkg of bacon.  Add 1 1/2  cup mayo, full 1/2 cup sugar and 4 T vinegar.

Tuna Pasta Salad

Directions:

  1. Cook pasta to directions
  2. Chop all vegetables
  3. Mix all ingredients together
  4. Refrigerate for at least 30 min.

The longer is marinates (2 + hours) the better it tastes!

Ramen Noodle Coleslaw

Directions:

  1. Remove flavor packets from soup mix and set aside.
  2. Crush noodles and place them in bottom of large bowl.
  3. Top with slaw mix; sprinkle with almonds, sunflower seeds and chopped green onions.
  4. Whisk together contents of flavor packets, sugar oil and vinegar.
  5. Pour over slaw.
  6. Cover and chill for at least 2 hours.
  7. Marinating overnight is best.
  8. Toss before serving.

Grandma’s Christmas Salad

Directions:

  1. Mix gelatin with boiling water then add cold water.
  2. Chill in fridge until thickened.
  3. Once thickened, fold in oranges, pineapple tidbits, cranberry sauce and walnuts.
  4. Stir throughly and refrigerate overnight.

Frito Salad

Directions:

  1. Wash and chopped all veggies
  2. Drain beans
  3. Layer each ingredient on top of lettuce – no specific order
  4. Pour desired amount of dressing on top
  5. Toss and let sit for about 30 min.
  6. Serve immediately

Frito salad is a wonderful compliment to any cookout or BBQ. The combination of the cheese, Fritos and Catalina dressing with the veggies is great.
