Green Chile Alfredo Sauce by Rich O’Toole

Directions:

  1. Saute the garlic and 1 cup of green chile
  2. In a separate skillet, melt butter over medium low heat.
  3. Add garlic, chile (from first sauce pan), cream and cheese and whisk quickly, heating thoroughly. Let simmer for 5 to 10 minutes. 

Serve while sauce is still hot. Pour over your choice of Pasta!

Chicken Roll-Ups and Easy Roasted Red Potatoes by Charla Corn

Chicken Roll-Ups Directions:

  1. Pre heat even to 350 degrees.  
  2. Add Panko Bread Crumbs, French Onions and Parsley into large bag and crunch together to make crumble. Pour mixture into a large plate or baking dish and set aside.
  3. Pound each chicken breast with meat tenderizer until flat.  
  4. Season with salt, pepper and garlic powder on one side.  
  5. Place 1 slice of deli turkey on seasoned side of chicken.  
  6. Place 1 slice of pepper jack cheese on top of turkey.

Cuban Roasted Pork Loin

Directions:

  1. Place pork in Crock Pot
  2. Add onions and garlic on top
  3. Squeeze all grapefruit and orange juices on top
  4. Pour one bottle of beer on top
  5. Salt and Pepper to taste
  6. Cook on low for 4 - 5 hours (or in an oven @ 300 degrees for 4 - 5 hours)
  7. Once cooked, shred all pork.
  8. Place on top of warmed corn tortillas
  9. Add chopped cilantro and jalapenos to top

Serve and enjoy!

*best if you can marinate overnight before cooking

Cornbread Casserole

Directions:

  1. Pre-heat oven to 350 degrees
  2. Brown meat with onion.
  3. In medium mixing bowl, mix eggs, cornbread mix, creamed corn, 1/3 c. oil and milk.
  4. Pour 2 Tbs. oil into a large iron skillet and heat for 10 min. pre-heated oven.
  5. Once oil is done heating, pour ½ cornbread mixture into bottom of skillet, add all of browned beef and onion, layer cheddar cheese on top of beef and top skillet off with remaining cornbread mixture. Bake 45-50 min. Cool for 20 min.

Chicken Spaghetti by Johnny Cooper

Directions

  1. Lightly season chicken with salt, pepper and Cajun seasoning
  2. Cook chicken and red onion together in a skillet with a small amount of vegetable oil until completely done.
  3. In a sauce pan, combine both soups, cheese and tomatoes over medium heat - stirring occasionally until cheese is melted.
  4. Once pasta is cooked, plate all ingredients together layering pasta, chicken and sauce on top.

Chicken Puffs by Jolie Holliday

Directions

  1. Boil chicken breast until completely cooked - shred/chop chicken
  2. Saute chopped green onions and 3 cloves of pressed garlic with 2 Tbs. butter
  3. Mix onions with softened cream cheese
  4. Add chicken to cream cheese mixture - mix thoroughly.
  5. Roll out crescent rolls. Place one large scoop of mixture at the wide part of each roll.
  6. Wrap all ends of roll to the top of the mixture.
  7. Brush a little melted butter on top of roll.
  8. Top with sesame seeds.
  9. Bake @ 350 for 20 - 30 min.

  1. Cut steak into serving size pieces (if they are large, I cut in half)
  2. Using a meat mallet, tenderize the steak to ¼ “ thick.

Chicken Enchiladas

Directions

  1. Mix first 5 ingredients together
  2. Spray 9 x 13 baking dish with non-stick cooking spray
  3. Add 2 - 3 spoonfuls of mixture into center of a Flour Tortilla and place Enchilada seam down in dish
  4. Once dish is full – sprinkle shredded Cheddar Cheese on top
  5. Pour entire can of Enchilada Sauce evenly over Enchiladas
  6. Heat Enchiladas in oven @ 375 degrees for 20 min.
  • Can garnish with shredded lettuce, salsa, sour cream, sliced avocado, black olives and paprika

Chicken & Veggie Italian Noodle Delight by Brandon Rhyder

Directions

  1. Marinate chicken in dressing w/ fresh garlic overnight or at least a few hours
  2. before cooking.
  3. Bring 2 qts water with 1 tsp of sea salt to boiling – cook pasta to al dente.
  4. Drain noodles and drizzle with olive oil – let sit while preparing the rest.
  5. Wash and pat dry marinated chicken.
  6. In a dutch oven or large skillet, heat olive oil to medium high heat and sear chicken on both sides for approx. 4 – 5 min per side. 
  7. Place chicken in separate dish and bake in oven set @ 350 for 20 min.
