Mema’s Banana Puddin’

Directions:

  1. Make the pudding as directed on the box
  2. Slice bananas
  3. In a large glass bowl you will layer the following:
    • Nilla Waffers
    • Sliced Bananas
    • Pudding
    • Cool Whip
    • Pecans
  4. Repeat the layers until the bowl has filled up.
  5. This recipe serves 8-10 people but you can always improvise
  6. As a matter of fact, if you are having an adult party and want to put an interesting twist to the dessert, you can dip the Nilla Waffers in rum.
  7. Let them sit on a cookie sheet to dry out a little before asse

Directions:

  1. Sift together:  flour, baking powder, baking soda, salt 
  2. Cream butter, add sugars and eggs with other dry ingredients, dates in mixer. 
  3. Add walnuts and mix by hand.  Spread out in brownie pan. 
  4. Bake at 325 degrees for 30 to 35 minutes until golden brown.

Cuatro Leches Cake

Directions:

  1. Bake cake as directed on box - let cool completely
  2. Mix cream, milks and vanilla together
  3. Poke holes all over cake with a fork
  4. Pour liquid ingredients over the top of the cake
  5. Cover and let sit in the fridge for two hours or overnight is better
  6. When ready to serve, saute strawberries with butter, sugar and Grand Marnier over low heat in a saucepan.
  7. Cut cake into squares and add berry mixture on top.

Chocolate Chip Pound Cake

Directions:

  1. Preheat oven to 350*
  2. Put cake mix and puddings in large mixing bowl
  3. Mix dry ingredients just until blended
  4. Add water, eggs and oil
  5. Beat on high speed for 3 minutes
  6. Fold in chips until well blended
  7. Spray bundt pan with Bakers Joy or baking spray with flour
  8. Pour cake into bundt pan
  9. Cook for 1 hour ( I start cooking it for 46-50 min—then check on it from there as you do not want to overcook it)
  10. Take out of oven and let cool 15 min before removing from pan

Chocolate Chip Pecan Pie by Zane Williams

Perfect Pie Crust 

Directions: 

  1. In a large mixing bowl, mix 3 C. of flour, 1 C. of canola oil, and 1 t. of salt. Set this mixture aside. 
  2. Mix 1 egg (lightly beaten), 1 T. of white vinegar, and 4 T. of water
  3. Pour the second mixture over the first and mix together (a large fork mixes it well). 
  4. Place about half the dough between two large sheets of wax paper.

Chocolate Chip Cookies

Directions:

  1. Pre-heat oven to 375 degrees
  2. In a large mixing bowl blend together until smooth and creamy - margarine Crisco, brown sugar, sugar, 2 eggs and vanilla.
  3. Gradually blend in flour ( 1 cup at a time) and then add salt and baking soda.
  4. Fold in chocolate chips and gently blend thoroughly.
  5. Refrigerate dough for 2 or more hours.
  6. Roll dough into 2” balls and place on a cookie sheet.
  7. Bake for 10 min only. Remove from oven and let sit on sheet for 2 more min. Then move to cooling rack or foil to continue cooling.

Cherry Pineapple Crisp by Pauline Reese

Directions for the filling

  1. Combine and let stand for 15 minutes
  2. Cook on simmer until thickened & clear (about 5-10 min)
  3. Let cool

Directions for dry ingredients

  1. Mix
  2. Press half of mixture into 9"x9"x2" baking pan
  3. Spread filling over crust
  4. Top w/crumb mixture
  5. Bake at 350 degree oven for 30 minutes

Blueberry – Lemon Tart by Gary P. Nunn

Directions:

  1. Preheat oven to 400 F.
  2. Whisk lemon juice, grated zest and melted butter in a bowl.
  3. Beat in eggs and sugar mixing well.
  4. Pour into pie shell and bake 20 – 30 min. until golden brown.
  5. Let cool for a while.
  6. Arrange blueberries over warm filling.
  7. Top each slice with homemade whip cream.

Blackberry Cobbler

Directions:

  1. Preheat oven to 400 degrees.
  2. Mix flour, sugar, baking powder, salt, and cinnamon in a large mixing bowl. Cut in the butter until you have a coarse, crumbly mixture. Add the boiling water and stir together well so that all of the dough is wet. Set aside.
  3. Dissolve the cornstarch in the cold water in a medium bowl. Add the lemon juice, berries, and sugar. Mix together well. Pour berries into a 9 - 11 inch cast iron skillet.
  4. Heat mixture over medium heat stirring frequently - mixture will thicken.
