Crock Pot Lasagna

Directions:

  1. Brown beef with onion and garlic.
  2. Add all cans of tomato sauce and paste.
  3. Simmer on low.
  4. In a medium bowl whisk egg. Add ricotta cheese, 1/2 cup parmesan cheese and fresh parsley.

Crock Pot Chicken Pot Pie

Directions:

  1. Chop all vegetables - carrots, celery, garlic and shallots.
  2. Chop chicken breast into 1” cubes.
  3. Whisk together wine, flour, whipping cream and chicken broth.
  4. Place chicken and vegetables in crock pot.
  5. Pour whisked liquid over chicken and vegetables.
  6. Give it a good stir and salt/pepper to taste.
  7. Set crock pot on low to cook for 6 - 7 hours or on high for 4 - 5 hours.
  8. 30 min before finished set oven at 350 degrees to cook biscuits.
  9. While biscuits are baking, fold chopped parsley into chicken mix

Crock Pot Black-Eyed Peas

Directions:

  1. If you are using dried black-eyed peas, soak them in water making sure the water covers the peas completely for at least 3 hours but preferably overnight.
  2. If you are using Melissa’s brand in the refrigerated section, skip soaking them.
  3. In a skillet, pan fry bacon and remove to plate.
  4. In remaining bacon grease, saute celery, onion and garlic.
  5. Pour black-eyed peas into crock pot or slow cooker, add sauteed vegetables, chopped jalapeno, crumbled bacon, beer, chicken broth and water.

Directions:

  1. Place beef in crock pot
  2. Add all liquids and soups
  3. Add all vegetables
  4. Cover and cook on low for 9 hours

 

*tip - the leaner the beef, the slower and longer it should cook to become tender

Chilly Willy Chicken

Directions:

  1. Layer chicken, all canned ingredients, onion, garlic and seasonings in a crock pot.
  2. Turn on low and cook for 6 - 8 hours.
  3. Once finished, shred chicken breasts with forks inside the crock pot.

Serve over warmed tortillas and add cheese, cilantro, jalapeno and sour cream to top.
