Chicken Wing Dip

Directions:

  1. Spread cream cheese on bottom of 9 x 13 baking dish
  2. Mix shredded chicken and wing sauce together and layer on top of cream cheese
  3. Pour dressing over chicken and spread evenly
  4. Bake uncovered @ 350 degrees for about 30 min.
  5. Serve with tortilla chips

Mexican Chicken

Directions:

  1. Heat oven to 350 degrees
  2. Layer chicken first then all remaining ingredients into a deep baking dish w/ lid
  3. Cover and bake for 2 hours

Serve with soft tortillas or crunchy taco shells

Stuffed Chicken Breast by Cody Gill

Directions:

  1. Mix ricotta cheese, garlic, olives, sun-dried tomatoes, and parsley all together in medium size bowl.
  2. Cut chicken breast in half down the sides of breast - making like a pocket.
  3. Stuff chicken breast with cheese mixture.
  4. Place stuffed chicken breast in a baking dish and cover well with entire jar of spaghetti sauce.
  5. Bake for 35 min. @ 350 degrees.
  6. After chicken has been baking for 25 min. sprinkle remaining mozzarella cheese on top and bake for remaining 10 min.
  7. Serve over your favorite pasta.

Rio Grand Chicken Sandwich

Directions:

  1. Lightly cover chicken breast with lemon pepper and salt and grill or bake chicken.
  2. Saute mushrooms with butter until slightly softened
  3. Once chicken is about 5 min from being completely cooked, add sliced pineapple to the grill and let it grill for the remaining time.
  4. Spread honey mustard on one side of hamburger bun and mayo on the other side of bun.
  5. Place chicken breast, swiss cheese, pineapple, saute’d mushrooms and sliced jalapenos on bottom bun.
  6. Add the top bun and Enjoy!

Chicken Roll-Ups and Easy Roasted Red Potatoes by Charla Corn

Chicken Roll-Ups Directions:

  1. Pre heat even to 350 degrees.  
  2. Add Panko Bread Crumbs, French Onions and Parsley into large bag and crunch together to make crumble. Pour mixture into a large plate or baking dish and set aside.
  3. Pound each chicken breast with meat tenderizer until flat.  
  4. Season with salt, pepper and garlic powder on one side.  
  5. Place 1 slice of deli turkey on seasoned side of chicken.  
  6. Place 1 slice of pepper jack cheese on top of turkey.

Crock Pot Chicken Pot Pie

Directions:

  1. Chop all vegetables - carrots, celery, garlic and shallots.
  2. Chop chicken breast into 1” cubes.
  3. Whisk together wine, flour, whipping cream and chicken broth.
  4. Place chicken and vegetables in crock pot.
  5. Pour whisked liquid over chicken and vegetables.
  6. Give it a good stir and salt/pepper to taste.
  7. Set crock pot on low to cook for 6 - 7 hours or on high for 4 - 5 hours.
  8. 30 min before finished set oven at 350 degrees to cook biscuits.
  9. While biscuits are baking, fold chopped parsley into chicken mix

Creamy Chicken Pasta

Directions:

  1. Cook pasta as directed.
  2. Heat ½ can of broth in large skillet and cook cubed chicken 5-7 min.
  3. Add softened cream cheese, spinach, remaining broth, garlic and salt/pepper – cook 3 – 5 min. – stirring continuously.
  4. Add tomatoes and cook another 3 – 5 min.
  5. Toss in cooked pasta
  6. Pour mixture in to 9 x 13 baking dish and sprinkle parmesan cheese on top.

Serve immediately!

Chilly Willy Chicken

Directions:

  1. Layer chicken, all canned ingredients, onion, garlic and seasonings in a crock pot.
  2. Turn on low and cook for 6 - 8 hours.
  3. Once finished, shred chicken breasts with forks inside the crock pot.

Serve over warmed tortillas and add cheese, cilantro, jalapeno and sour cream to top.

Chicken Velvet Soup

Directions:

  1. Boil and shred chicken breast
  2. Reserve 3 cups of broth from the pot and strain.
  3. In a large pot, melt butter over low heat and add flour stirring occasionally
  4. Add 2 cups of broth and mix well to flour mixture
  5. Add 1 warmed cup of milk and 1 warmed cup of whipping cream. Mix well.
  6. Add remaining chicken broth and shredded chicken. Bring to a boil while stirring.
  7. Add salt and pepper to taste. Turn heat off and serve!

Chicken Spaghetti by Johnny Cooper

Directions

  1. Lightly season chicken with salt, pepper and Cajun seasoning
  2. Cook chicken and red onion together in a skillet with a small amount of vegetable oil until completely done.
  3. In a sauce pan, combine both soups, cheese and tomatoes over medium heat - stirring occasionally until cheese is melted.
  4. Once pasta is cooked, plate all ingredients together layering pasta, chicken and sauce on top.
