Mini Pineapple Upside Down Cakes

Directions:

  1. Dump cake mix into a mixing bowl. Add pineapple juice (about 1 cup), oil and eggs and blend until moist.

Scary Skull Cakes

Directions:

  1. Heat oven to 350 F degrees. Place paper baking cup in each of 24 regular-size muffin cups. Make and cool cupcakes as directed on box.
  2. Carefully pull back a small section of paper from each cupcake; insert cut side of large marshmallow between paper and cake of each. Frost tops of cupcakes and marshmallows to look like skull shape.
  3. For the face, use 2 Junior Mint candies for the eyes, 1 chocolate chip for the nose (pointed side down) and 6 – 8 slivered almonds for teeth. Store loosely covered.
  4. These can be made in advance and frozen.

Pumpkin Cake & Cupcakes

Directions:

  1. Pre-heat oven to 350 degrees
  2. For batter, combine first 6 ingredients in a mixing bowl and blend on low speed for 30 sec., then mix on high for 2 minutes.
  3. For Cupcakes: Using 1/2 batter - Place liners in a 12 muffin tin and fill each cup 3/4 full.
  4. Bake for 20 -25 min and let cool for 30 min.

Cuatro Leches Cake

Directions:

  1. Bake cake as directed on box - let cool completely
  2. Mix cream, milks and vanilla together
  3. Poke holes all over cake with a fork
  4. Pour liquid ingredients over the top of the cake
  5. Cover and let sit in the fridge for two hours or overnight is better
  6. When ready to serve, saute strawberries with butter, sugar and Grand Marnier over low heat in a saucepan.
  7. Cut cake into squares and add berry mixture on top.

Chocolate Chip Pound Cake

Directions:

  1. Preheat oven to 350*
  2. Put cake mix and puddings in large mixing bowl
  3. Mix dry ingredients just until blended
  4. Add water, eggs and oil
  5. Beat on high speed for 3 minutes
  6. Fold in chips until well blended
  7. Spray bundt pan with Bakers Joy or baking spray with flour
  8. Pour cake into bundt pan
  9. Cook for 1 hour ( I start cooking it for 46-50 min—then check on it from there as you do not want to overcook it)
  10. Take out of oven and let cool 15 min before removing from pan
