Cornbread Casserole

Directions:

  1. Pre-heat oven to 350 degrees
  2. Brown meat with onion.
  3. In medium mixing bowl, mix eggs, cornbread mix, creamed corn, 1/3 c. oil and milk.
  4. Pour 2 Tbs. oil into a large iron skillet and heat for 10 min. pre-heated oven.
  5. Once oil is done heating, pour ½ cornbread mixture into bottom of skillet, add all of browned beef and onion, layer cheddar cheese on top of beef and top skillet off with remaining cornbread mixture. Bake 45-50 min. Cool for 20 min.

Brisket Sliders

Directions:

  1. Mix all seasonings, spices and sugar together and rub all over brisket
  2. Place fat side up and wrap completely in foil
  3. Put brisket in a large baking dish
  4. Cook slowly in oven @ 250 degrees for 3 hours or until done
  5. Garnish buns with mayo, mustard, onion and jalapenos! YUM!!!

Bachelor Chili by Robert Stowell

Directions:

  1. Brown ground beef
  2. Add beans, tomato sauce, chili powder and seasonings
  3. Let simmer for 10 - 30 min - stirring occasionally
  4. Top with shredded cheddar cheese and serve with Saltine crackers

*Everglade Seasoning is an all-purpose seasoning. You can improvise with another brand or you can order it online

Amy’s Texas Chili

Directions:

  1. In a large skillet, brown ground beef with onion and garlic.
  2. Add remaining ingredients and simmer on low stirring occasionally.
  3. Serve with grated cheese, dollop of sour cream and a handful of Fritos Corn Chips on top.
