Beef Tips

Directions:

  1. Pre-heat oven to 300 degrees.
  2. Layer all ingredients in a medium sized baking dish
  3. Cover and cook for 3 ½  hrs.
  4. Serve over wide egg noodles or rice!

Directions:

  1. preheat oven 400 degrees
  2. lightly grease muffin pan
  3. cook ground beef and drain (this is where onion and garlic go if you wanted)
  4. stir in BBQ sauce and let simmer for 3 minutes
  5. roll out each biscuit on a floured surface large enough so it could spread into muffin hole (in a cup shape)
  6. fill each biscuit with meat mixture and top with cheese
  7. bake until biscuits are brown, about 15 minutes

Texas Hash

Directions:

  1. Brown meat, onion and bell pepper in skillet
  2. Add rice, tomato sauce and water - stir well
  3. Cover and cook on low heat for 30 min.
  4. Serve immediately

Tex Mex Taco Burgers with Jon Wolfe

Directions:

  1. Mix everything (except for the cheese) together in a bowl.
  2. Make patty into a ball
  3. Make a deep hole in center of patty for cheese
  4. Fill patties with cheese, cover hole with beef….grill

Because patties are thick, grill on low/med heat making sure center is completely cooked before serving

You can serve on Kaiser Rolls or Hamburger Buns

Salsa(optional) or traditional condiments such as Mayo, ketchup, etc.

Taco Soup

Directions:

  1. Brown ground beef with onion. Add all remaining ingredients. Simmer for 20 + min.
  2. Can add toppings such as cilantro, cheese, avocado and corn tortilla strips

Stuffed Shells

Directions:

  1. Cook shells as directed.
  2. Brown ground beef with onion and garlic salt.
  3. Once beef is brown, put in large mixing bowl.
  4. Add ricotta cheese, 1 cup mozzarella cheese, 1 cup parmesan cheese and garlic.
  5. Stir until completely mixed.
  6. Place a few spoonfuls of mixture into cooked shells – filling the shell.
  7. Once full, turn the shell seam down into a baking dish. Continue stuffing until baking dish is full.
  8. Pour marinara over shells completely.

Sideways Stacked Enchiladas By Justin Frazell and Jamie Richards

Directions:

  1. Brown the beef and add the salsa while the beef simmers.
  2. Chop the tomato
  3. Grease a 8” x 11” baking dish with butter.
  4. On the bottom, place 2 flour tortillas.
  5. Add, a layer of the meat mixture.
  6. Next, add a layer of cheese.
  7. Repeat the process 2 more times or until the dish has become full.
  8. On the top, add the enchilada sauce, remaining cheese and sprinkle with tomato and black olives.
  9. Bake @ 350 for 15 - 20 min.

Crock Pot Lasagna

Directions:

  1. Brown beef with onion and garlic.
  2. Add all cans of tomato sauce and paste.
  3. Simmer on low.
  4. In a medium bowl whisk egg. Add ricotta cheese, 1/2 cup parmesan cheese and fresh parsley.

Crock Pot - Pot Roast

Directions:

  1. Place beef in crock pot
  2. Add all liquids and soups
  3. Add all vegetables
  4. Cover and cook on low for 9 hours

 

*tip - the leaner the beef, the slower and longer it should cook to become tender
