Peach Cobbler

4 cups (5 - 7) fresh peaches, peeled and chopped
1 stick unsalted butter
2 cups sugar
1 cup flour
1 Tbs. baking powder
1 pinch salt
1 cup buttermilk
1 tsp. vanilla
1 Tbs. lime juice


  1. Pre-heat oven to 375 degrees. 
  2. Once heated, melt butter in a 9” baking dish. Watch carefully that it doesn’t burn.
  3. Peel and chop all peaches
  4. In a medium mixing bowl, add flour, 1 cup sugar, baking powder, salt and buttermilk.
  5. Gently stir until moist.
  6. Pour batter over melted butter. Do not stir.
  7. In a medium saucepan, add peaches, 1 cup sugar, lime juice and vanilla.
  8. Bring to a boil on high heat, stir constantly.
  9. Pour over batter.
  10. Sprinkle cinnamon on top if desired.
  11. Bake for 35 - 45 min. until golden brown 
  12. Serve warm with a scoop of vanilla ice cream.
