Mandarin Orange Salad

1 head Bib lettuce
1 head Romaine lettuce
3 - 4 green onions - washed & chopped
4 - 5 stalks celery - washed & chopped
1 15 oz. can Mandarin oranges - drained
1 (1/2 cup) pkg. slivered almonds - toasted
*dressing: 1/4 cup Red Wine or Tarragon Vinegar
1/4 cup sugar
1/2 cup Vegetable or Olive Oil
1/2 tsp. Tabasco Sauce


  1. Wash and dry lettuce. Break into bite sized pieces and place into a large salad bowl.
  2. Add green onions, celery and oranges. Toss gently. Sprinkle almonds over top.
  3. In a separate bowl, mix all dressing ingredients well with a whisk. 

(It’s best to let each individual pour desired amount of dressing onto each salad. So if there’s any leftover salad it will keep longer w/o dressing on it. A little dressing goes a long way.)
