Roasted Garlic Butter:
I take a whole bulb of garlic, cut the top off where the raw garlic is exposed, season with olive oil, sea salt and fresh cracked black pepper and wrap in foil. Place in 300-degree oven for 35 minutes. Allow to cool. On a paper plate I squeeze the roasted garlic and blend with one whole stick of butter. Refrigerate. I use this in many different recipes and when I run out I simply make more. I love garlic!
I went to the farmer’s market and bought a basket of roma tomatoes. I removed the seeds and cut them up and put them in the food processor. I then add olive oil and a pinch of salt and fresh cracked black pepper. I have an herb garden on my back porch that consists of basil, oregano, rosemary, parsley and thyme. I use approximately half a tablespoon of each with the exception of the basil. I use at least a TB of basil. Place in the food processor with the tomatoes and blend. I don’t like to liquefy the tomatoes. I like to leave the sauce a little chunky. I then place the sauce in a pan and bring to a boil and reduce to a simmer. I then mix in tomato paste to thicken the sauce. Sample and add salt if needed to taste. Sauce is done!
Fresh Italian Sausage:
I bought fresh ground Italian sausage from the butcher. Place in skillet and brown. I then transfer to paper towels to drain excess fat. It doesn’t matter if it gets cool, because it will be reheated in the oven.
Fresh Garden Vegetables:
I bought fresh squash, zucchini, red and green bell peppers, onions, and banana and mariachi peppers. I rub them with oil and place on the grill on medium heat turning as they blacken. Remove from grill and allow cooling. Remove skins from peppers and slice removing seeds from all peppers. Slice squash and zucchini however you prefer.
Making The Pizza:
I like to take the roasted garlic butter and spread it on the pizza crust. I then add the sauce over the pizza crust. Next I put the Italian sausage, a combo of all the peppers, the onion, mushrooms, squash and zucchini on the pizza. Finally I take fresh mozzarella slices and slices of tomato and basil leaves and layer the top. Pop in the oven at 350 degrees for 8-10 minutes and dinner is served!
