Kay's Walnut Salad

Ingredients: 
1 cup chopped walnuts
1 pkg. Ramen noodles, broken into big chunks
½ stick butter
1 head broccoli, chopped into bite sized pieces
1 head Romaine lettuce, torn into bite sized pieces
4 - 5 green onions, thinly sliced to light green parts

Directions:

  1. In a small skillet, saute noodles and walnuts in butter. Drain on a paper towel.
  2. Wash and cut all veggies and lettuce.
  3. Place all veggies and lettuce in a large salad bowl.
  4. Top with sauteed noodles and walnuts.

 

 

For Dressing: (to taste)

½ cup Extra Virgin Olive Oil

1½ - 2 cups Red Wine Vinegar

Several dashes Soy Sauce

Salt and Pepper (to taste)

 

 

 

*Pour dressing over salad just before serving.

*double for a large crowd
