Gulf Coast Shrimp and Rice by JB and the Moonshine Band

1 lb. shrimp, peeled and deveined
1 1/2 cups rice (uncooked)
2 celery sticks, chopped
1 yellow onion, chopped
1/2 red bell pepper, chopped
1/2 yellow bell pepper, chopped
4-6 green onions, chopped (use all of white through half of green portion)
3 cloves of garlic, minced
1 stick of butter
Tabasco sauce


  1. Cook rice as directed.
  2. In a large skillet, melt butter over medium heat. 
  3. Add celery, onion, and bell pepper. 
  4. Cook until tender. 
  5. Add the garlic and shrimp. 
  6. Cook until shrimp is pink, about 5 minutes. 
  7. Add salt and pepper to taste.
  8. Add cooked rice to desired consistency.
  9. Stir to combine. 
  10. Add green onions. 
  11. Stir to combine. 
  12. Season to taste with salt and pepper.

Serve immediately.


Optional:  A couple splashes of Tabasco sauce gives this dish a great kick and can be added at table.
