Festive Sweet Potato Casserole

Ingredients: 
1 40 oz. can yams/sweet potatoes in syrup (or 3 cups cooked), mashed
1/2 cup sugar
1/4 cup milk
1/3 cup butter, melted
1 tsp. vanilla extract
2 eggs, beaten
.:Toppings:.
1 cup packed brown sugar
1/3 cup all-purpose flour
1/3 cup butter, melted
1 cup chopped pecans
1 cup flaked coconut (optional)

Directions:

  1. Pre-heat oven to 375 degrees.
  2. Combine first 6 ingredients in a large mixing bowl mixing well.
  3. Lightly grease 8” x 8” square baking dish. Spoon into prepared baking dish.
  4. Combine topping ingredients in a medium mixing bowl, sprinkle over top of sweet
  5. potato mixture. Bake for 20 - 25 min. or until golden brown.
  6. Yields 6 servings
