Cuban Roasted Pork Loin

Ingredients: 
1 5 - 6 lb. Pork Loin
2 large Grapefruits - cut in halves
2 large Oranges - cut in halves
5 cloves Garlic - chopped
1 med Onion - chopped
1 bottle Beer - any kind
Corn Tortillas
Cilantro - chopped
Jalapeno - chopped
*Optional topping - Shredded Cheddar Cheese

Directions:

  1. Place pork in Crock Pot
  2. Add onions and garlic on top
  3. Squeeze all grapefruit and orange juices on top
  4. Pour one bottle of beer on top
  5. Salt and Pepper to taste
  6. Cook on low for 4 - 5 hours (or in an oven @ 300 degrees for 4 - 5 hours)
  7. Once cooked, shred all pork.
  8. Place on top of warmed corn tortillas
  9. Add chopped cilantro and jalapenos to top

Serve and enjoy!

*best if you can marinate overnight before cooking
