Cornbread Salad

1 pkg. sweet cornbread - cooked as directed, cooled and cubed
1 bag Fresh Express Sweet Butter Lettuce (or 1 head of butter lettuce and 1 head of red leaf lettuce)
1 can kidney beans - drained and washed
sharp cheddar cheese - grated
carrots - shredded
red cabbage - finely chopped
1 lb. bacon - cooked and crumbled
1 cucumber - chopped
red onion - finely chopped
grape or cherry tomatoes - halved
fresh parsley - finely chopped


  1. Make the cornbread as directed on package. Cool completely and cut into small cubes.
  2. In a large, clear salad bowl, begin layering with lettuce first.
  3. Make sure to add more lettuce and cornbread to the center layers.
  4. Top with more cornbread.
  5. *For a light dressing: drizzle olive oil and fresh squeezed lemon juice to the top.
