Christmas Salad

Fresh Spinach
1 small red onion, thinly sliced
1 avocado, sliced
1 container Feta or Goat cheese, crumbled
Dried pomegranates
Dried blueberries
Dried cranberries
For dressing:
4 Tbs. Cranberry concentrate
4 Tbs. Rice Wine vinegar
1½ tsp. Dijon mustard
¼ tsp. black pepper
½ cup vegetable or canola oil



  1. In a large bowl, layer spinach, red onion, sliced avocado, cheese and dried berries to top. Add as much or as little of each ingredient to desired taste.
  2. For dressing, whisk all ingredients together in a small bowl.
