1 small red onion, thinly sliced
1 avocado, sliced
1 container Feta or Goat cheese, crumbled
4 Tbs. Cranberry concentrate
4 Tbs. Rice Wine vinegar
1½ tsp. Dijon mustard
¼ tsp. black pepper
½ cup vegetable or canola oil
- In a large bowl, layer spinach, red onion, sliced avocado, cheese and dried berries to top. Add as much or as little of each ingredient to desired taste.
- For dressing, whisk all ingredients together in a small bowl.
