2 - 3 lbs. boneless, skinless chicken breast
1 can black beans, drained
1 can corn, drained
1 can Original Rotel with green chilies
1/4 cup sweet onion, chopped
4 - 5 cloves fresh garlic, pressed
1 tsp. cumin
1/2 tsp. cayenne pepper
1 Tbs. chili powder
salt/pepper to taste
flour or corn tortillas
cheddar cheese, shredded
cilantro, chopped
jalapeno, chopped
sour cream


  1. Layer chicken, all canned ingredients, onion, garlic and seasonings in a crock pot.
  2. Turn on low and cook for 6 - 8 hours.
  3. Once finished, shred chicken breasts with forks inside the crock pot.

Serve over warmed tortillas and add cheese, cilantro, jalapeno and sour cream to top.
