2 - 3 lbs. of chicken breast, wings or thighs
2 cans pineapple chunks
1 jalapeno - diced
1 Poblano pepper
Extra Virgin Olive Oil
4 cloves garlic
1 yellow onion
- In a medium sized bowl, mix pineapple and garlic cloves, orange and lemon zest along with fresh squeezed orange, lemon and lime juice, splash of olive oil, chopped peppers, onion and cilantro.
- Puree all the ingredients in a food process or blender.
- Place the chicken in a zip lock bag with the marinade for an hour or longer if possible.
- Cook on the grill or in the oven.
