2 - 3 lbs. of chicken breast, wings or thighs
1 orange
1 lemon
1 lime
2 cans pineapple chunks
1 jalapeno - diced
1 Poblano pepper
Extra Virgin Olive Oil
4 cloves garlic
1 yellow onion


  1. In a medium sized bowl, mix pineapple and garlic cloves, orange and lemon zest along with fresh squeezed orange, lemon and lime juice, splash of olive oil, chopped peppers, onion and cilantro.
  2. Puree all the ingredients in a food process or blender.
  3. Place the chicken in a zip lock bag with the marinade for an hour or longer if possible. 
  4. Cook on the grill or in the oven.
