Cherry Pineapple Crisp by Pauline Reese

(1) 14.5 oz can pitted tart red cherries - drained
(1) 20 oz can crushed pineapple - undrained
1 cup granulated sugar
2 tbs quick “minute” tapioca
1 tbs fresh lemon juice
2 drops red food coloring
.:Dry Ingredients:
1 cup sifted flour
1 cup quick cooking rolled oats
2/3 cup brown sugar
1/2 cup melted butter

Directions for the filling

  1. Combine and let stand for 15 minutes
  2. Cook on simmer until thickened & clear (about 5-10 min)
  3. Let cool

Directions for dry ingredients

  1. Mix
  2. Press half of mixture into 9"x9"x2" baking pan
  3. Spread filling over crust
  4. Top w/crumb mixture
  5. Bake at 350 degree oven for 30 minutes
