Avocado Pesto Sauce

1 lb. linguine or your favorite pasta
1 bunch (2 cups) fresh basil - either from garden or store bought (I use a big handful)
1/4 tsp. salt
2 Tbs. extra virgin olive oil
1/3 cup pine nuts
1/3 cup shredded parmesan cheese
5 garlic cloves, peeled and smashed
2 lemons - freshly squeezed, removing any seeds (I prefer Meyer lemons if you can find them)
2 avocados - peeled, pitted and halved
cherry tomatoes, 1/2 cup parmesan cheese, 1/2 cup pine nuts (toasted) - for garnish
- In a food processor, add basil, salt, pepper, olive oil, pine nuts, cheese, garlic, lemon juice and avocados. Pulse until you have a smooth, creamy mixture.
- Toss with cooked linguine and top with extra cheese, nuts and tomatoes.
