Directions:

  1. Heat 1 cup milk to scalding (but not boiling). Pour into a mixing bowl and add ½ stick butter with ¼ cup sugar. Gently mix while butter is melting.

  1. Fill large pot with water completely covering the eggs. Bring to a rolling boil then turn heat off. Let eggs continue to cook for 20 - 25 min. Carefully drain water and refill pot with cold water.

Directions:

  1. Making 4 layers in a 9 x 13 glass dish
  2. 1st layer - butter, flour and 3/4 cup pecans mixed together and pressed into the bottom of glass dish.

Asian Baked Tilapia

Directions:

  1. Place garlic, jalapeno, ginger, brown sugar, cilantro, lime juice, soy sauce, white wine and sesame oil in food processor and blend until well mixed.

Avocado Pesto Sauce

Directions:

  1. In a food processor, add basil, salt, pepper, olive oil, pine nuts, cheese, garlic, lemon juice and avocados.

Sweet Kisses

Directions:

  1. Hand toss first three ingredients in a big bowl
  2. Beat egg whites and add to mixed ingredients
  3. Add salt and vanilla and mix well.
  4. Place a small spoonful onto non-stick baking sheet (or regular greased baking sheet)
  5. Bake @ 325 for 10 - 12 min. Keep an eye as some ovens may vary.

Whole Wheat Popovers

Directions:

  1. Heat oven to 450 degrees.
  2. GENEROUSLY grease custard or popover pan.
  3. Mix all ingredients with mixer until smooth.
  4. Fill custard cups 1/2 full.
  5. Place on center rack and bake for 20 min. - make sure top rack is taken out.
  6. Reduce heat to 350 degrees and bake 20 - 25 more min.
  7. Pull if getting to brown on top.
  8. Remove from cups and serve hot.

*If they are stuck to cups, take a dinner knife and gently go around the inside of the cup while loosening the popover.

Ramen Noodle Coleslaw

Directions:

  1. Remove flavor packets from soup mix and set aside.
  2. Crush noodles and place them in bottom of large bowl.
  3. Top with slaw mix; sprinkle with almonds, sunflower seeds and chopped green onions.
  4. Whisk together contents of flavor packets, sugar oil and vinegar.
  5. Pour over slaw.
  6. Cover and chill for at least 2 hours.
  7. Marinating overnight is best.
  8. Toss before serving.

Chilly Willy Chicken

Directions:

  1. Layer chicken, all canned ingredients, onion, garlic and seasonings in a crock pot.
  2. Turn on low and cook for 6 - 8 hours.
  3. Once finished, shred chicken breasts with forks inside the crock pot.

Serve over warmed tortillas and add cheese, cilantro, jalapeno and sour cream to top.
