Guac Star Burritos by Austin Allsup
2 lg. avocados
1 small onion, finely chopped
1 clove garlic, minced
1 ripe tomato, chopped
1 lime, juiced
salt and pepper to taste
3 - 4 eggs, scrambled
bacon or sausage, cooked
3 potatoes, chopped and cooked

1) Make guacamole with above ingredients.
2) Fry potatoes in frying pan with a little vegetable oil.
3) Cook bacon either in skillet or microwave.
4) Scramble eggs.
5) Layer potatoes, egg, guacamole and bacon inside a tortilla and roll together.
